Aubergine madras

This Aubergine Madras is a delicious curry that will quickly become one of your go to meals. It is simple to make and tastes rich and decadent. Give this one a go when you're in need of a 15min meal. 

Ingredients

  • 1 ripe aubergine cut into chunks
  • 1 onion cut into chunks
  • 4 cloves of garlic finely chopped
  • 1/2 cup of raisins
  • 2 tbsp madras paste 
  • 200ml coconut milk
  • 2 handfuls of fresh spinach

Method

Drizzle some oil in a warm pan and add in your aubergine and sauté for 10 minutes. Now you can add in your onion and garlic and sauté for a few more minutes before adding your madras paste and rasins. Stir to coat all of the ingredients in the paste and cook for a few minutes. 

Now you can add in your coconut milk and stir to create a thick rich sauce. Let that bubble away for a few minutes then add in two handfuls of fresh spinach and stir that in. Allow that to wilt then serve your madras with freshly torn naan bread.
